One of the best RPG soundtracks on the SNES is one you may have missed. Bahamut Lagoon was a Squaresoft game that never made it out of Japan (you can get fan translations though). The music was composed by Noriko Matsueda, and I think it rivals the Final Fantasy soundtracks.
