What we used to call Chinese food is now largely only found in outback towns where they still love it and occasionally revolts grey nomads. Chinese cuisine in the cities has moved up market and is still not representative of the food served in China.
People think Chinese food was invented in China, but a moment's thought should tell you this makes no sense. Chinese food can't have been invented in China, because they'd just call it "food". It can only be "Chinese food" once it goes somewhere else.
