Cities Skylines 1 and 2 both play pretty well with just the mouse, so they shouldn't be a problem one handed. You could also try some turn based games like Civilization, where you'll have plenty of time to fiddle with the controls. And there's always old fashioned point-and-click adventure games like the Sam & Max series.
