The rice flour must be of the very fine, almost starchy kind, try the Asian store. ("Glutinous" rice flour is still gluten free). I started with Xanthan gum but find guar gum works better. The batter should almost flow. If too sturdy, add a bit of water or milk. Once it comes out, let it rest on a wire rack for >30 mins.
